Wholegrain Milling's Organic stoneground flours, Rye- for starter, Wheat - unbleached white and wholewheat for the dough
Organic polenta, coarse ground, for dusting baking vessels
Celtic sea salt, coarse and fine ground, for the dough
Nuts, seeds and whole grains, for possible additions to later loaves
Dried fruits, for possible addition to later loaves
Avalon wholefoods & Scoop or your local bulk wholefoods shop, in Sydney I like Wholefood House and Taste Organic's shops and Harris Farm have a reasonable range too
Olsson's Marine mineral salt, fine and coarse and their flake salt for finishing loaves
Tasmanian sea salt with wakame or Phyco seaweed salt is great in crackers and for finishing a loaf
Berkelo Bakery in Brookvale, Mosman and Manly, sell
Wholegrain milling flours in 3 kg bags and sometimes they also have freshly milled flour too
When you need a big beautiful loaf of Sourdough for an occasion or because you can't bake this week, try theirs
QUEENSLAND
You have Kialla a wonderful producer of organic grain and flour including spelt
I am using a variety of Biodynamic wholegrains from Victoria, sourced from Sovereign Foods They have a wide range of austrailian wholefoods and flour.
SOUTH AUSTRALIA
Four Leaf Milling is fabulous organically grown local flour
VICTORIA
When in Melbourne I shop at Terra Madre an excellent wholefood store for fresh and dried
I have used this Powlett Hill Victorian flour Demeter biodynamic certified flours in Victoria to great effect.
I have also used Woodstock flour range. They are a small producer growing and milling on the farm in Victoria
WESTERN AUSTRALIA
Eden Valley Demeter biodynamic certified heirloom wheat, rye and barley flours. We won't be using barley flour but it's a beautiful thing, low gluten, soft and very heavy. Their Atta flour is light and makes a lovely addition to a wholemeal loaf

Use what you have, make do where you can and look in op shops and markets, for second hand cast iron and the like.

- BAKERS BREAD TINS - 2 x 1 kilo commercial bread tins, heavy for size and narrower at base
- CLOTHS 2 tea towels to use over your doughs. Shower caps are popular but I prefer no plastics if possible, wax cloth is handy here.

Chefs Warehouse - Banetton, bread tins, scrapers, bowls, spoons, thermometers, linen cloths +
Simply No Knead in Victoria - steel bread tins - note you must oil these for every bake
Mackies - commercial bread tins + contact by email is easiest [email protected]
I use these tins and love them. Wash with soapy water, rinse well and never wash again! Just wipe out with a dry cloth and NEVER scour them.
Sizing is super confusing.
I have two sizes, their 340g tin and their 900g tin. However that weight doesn't correspond to the weight of dough they hold. I add half the recipe to either and get a small but high top loaf or a lower long loaf, great for sandwiches. They deliver very fast and service is great but I find, email is best way to contact them.
