About me... 

My use of traditionally made Japanese Wholefood ingredients has it roots in a deep love and respect for Japanese customs, culture and how traditional Japanese food perfectly reflects the changing seasons.

I have been teaching and pioneering wholefood cooking using the highest quality wholefood ingredients and ferments, since 1984. My food has satisfied hundreds of thousands of people and I have taught many thousands of staff and students the art of their use.  

My intent is to seduce people to better ways of thinking about, sourcing, preparing and eating balanced wholefood meals. I do this so that, the choices we make assures a better future for us all.

Well cooked brown rice is a nutritious and sensorial delight, poorly cooked, it is ghastly. When I ran Iku Wholefoods Kitchen in the 90's, we cooked 8 tons of medium grain brown rice a year and we made countless musubi with it!
